There's something about just digging through the fridge to fill four little containers with healthy food that's easier than packing the same lunch without the container.
In spite of a dearth of enticing leftovers, today's packed lunch looks pretty good to me. Clockwise from the top left in the (lousy cell-phone) photo, lunch consists of:
- Quorn (frozen) with cheddar over spaghetti squash (pre-cooked). Edemame (frozen).
- Peanuts and raisins (You ate this in pre-school because it is yummy!) The dressing container is full of Annie's Goddess Dressing for dribbling over the
- Sweet potatoes (pre-cooked).
Everything but the peanuts and raisins will be warming in the office microwave. I'm also taking an apple for a snack.
